My menu was simple fare. I would begin with bone soup with the proper accompaniment; csiga tészta, a tiny drop of pasta that looked like snail shells. The showpiece would be whole smoked pigs with crackling crisp ears and hocks. Served alongside was the traditional Hungarian handmade pasta, nokedli (spaetzle) and babfőzelék (green and wax bean stew.)
